Chicken Chettinadu Gravy



 Hi guys 👋🏻 Here I’m going to share the South India’s most authentic dish made with chicken, fresh roasted spices & herbs. Based on the favourable chettinadu chicken recipe many modern versions have been derived. 

      Here I like to share the recipe which I made in my own way of cooking.



Ingredients:- 


  • Chicken 🐓 - 1kg 
  • Onions 🧅   -2
  • Tomatoes 🍅 -2
  • Chilli powder - 1/2 tsp 
  • Turmeric powder - 1tsp 
  • Fresh Pepper corn - 2 tsp 
  • Ginger garlic paste - 2 tsp 
  • Cumin seeds          -1 tsp
  • Cloves                   - 2
  • Dry Kashmiri chilly - 4 
  • Cardamom            - 2 tsp 
  • Cinnamon             -1          


Preparation:- 

 I started with adding all the spices mentioned in ingredients list (Pepper, cumin seeds, cardamom and dry chilli) that are to be dry roasted together on a pan without oil. Dry roast the whole spices well and then grind them to powder consistency. 

     Now to the process to make the gravy. Initially start with sauteing cloves, cinnamon and curry leaves.  

Then saute onions and cook in low flame until it turns golden brown, along with fried onions add freshly chopped tomatoes with salt as required. Add ginger garlic paste at this stage. Cook for 5 mins until it gives gravy consistency. Then add all the ready made masalas like chilli powder, turmeric powder and sauté for 2 mins. When the oil start to separate from masala add chicken along to that and cook for 10 more mins. When the chicken half cooked and here is where we add the chettinadu magic masala we grind.


      Mix chicken well with that magic masala and add required water, close the lid and cook for 15 mins until chicken cooked and comes out well in gravy texture and consistency. You can enjoy the fresh heavenly aroma of chicken when cooking. Enjoy and have your chettinadu chicken gravy with fantastic combination of white rice and sambar. Adipoli Makkalae👌
